We love roasted tomatoes but wanted one without a stuffing or breadcrumbs, for a more tomato flavor. I made this, let it slow roast. They are delicious, but when I first served them my family laughed at them. Now when anyone wants them they ask for the ugly tomato! Hence the name.

Ingredients

  • 4firm ripe medium to large fresh tomatos
  • 1/2 cupchicken stock
  • 1/4 cupheavy cream
  • 1/2 tspitalian seasoning
  • 2 clovesgarlic, minced
  • 1shallot, minced
  • 4 Tbspbalsamic glaze, which is a thick balsamic vinegar reduction
  • 1/2 tspblack pepper and salt to taste
  • 1/2 tspsriracha seasoning
  • 4 Tbspgrated parmesan cheese
  • 4thin slices provalone or your favorite cheese
  • 20sliced pepperoni

    Preheat oven to 300°F.

    Butter 4 individual oven safe dishes big enough to hold tomatos fairly snug, but with enough room to allow bubbling of sauce so it does not bubble out.

    Slice thin top off tomatoes, core and make a few slits with a knife, place in their individual dishes.

    In a saucepan film the bottom with a bit of olive or any oil, add shallot and garlic and soften. Add all remaining ingredients except cheese and pepperoni, just bring to a simmer, spoon evenly over each tomato.

    Sprinkle each tomato with 1 tablespoon parmesan cheese, then put one slice of cheese on each tomato.Press 5 overlapping pepperonis firmly on each tomato.

    Roast on a foil lined cookie sheet at 300°F for 2 hours until very tender but still intact. Serve in the dish it is cooked in. It will not transfer to a plate witout breaking. Enjoy.

    This is a great side dish to any meal. They can also be made in advance and reheated in the microwave just until hot.

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
