Wanted egg noodles with my Kielbasa and white sauce.
Cooking Instructions

Mix first flour then salt. Then eggs, milk and butter.

Knead the dough on a broad that's heavily floured. Until smooth about 5 minutes.

Then cover the dough balled for 10 minutes.

Roll out on board to 1/4 inch. And slice to your preference. I used a pizza cutter.

Stack and air dry. About 15 minutes. They should be soft and not sticky.

Cook for 2 to 3 minutes. Place in already boiling salted water. Use a big pot so they don't stick together.

I used to use a hand-cranked pasta machine. People have only 2 hands...to be able to turn the handle and to catch the noodles at the same time is an amazing feat! I always had to ask someone to help me whenever I made noodles. Now I have a motorized pasta machine, so I can make noodles by myself.I used powdered lye (kansui). I measure it out each time in grams and dissolved it in water.The finished noodles aren't yellow; they're actually a very very pale green.When you boil the noodles, they'll take on that smell and yellow color of Chinese noodles. Fresh homemade pasta is so good!!! I love it so much, that I've been making it myself using this recipe since I was in high school, for nearly 20 years.It's a very stiff dough, but keep working it without adding any liquid. You need some strength to knead it, so you can put it in a plastic bag and step on it. If you are rolling the dough out by hand, if you do it slowly while letting it relax, it should go well. #navratri2019You don’t realize how amazing a dish is with the extra homemade factor until you try it.So easy !!!You don’t need a pasta machine. All you need are three ingredients -Eggs, flour, and salt. And a rolling pin. Anyone can make these.This recipe is very forgiving. Egg noodles are not like pie crust or pastry dough where you have to be cautious with how much you handle the dough. You can’t over-mix them. If you feel like the dough is too “dry” you could add a little splash of water. If you feel like it’s too sticky, add another sprinkle of flour. You really can’t mess them up.I’ve found that allowing the dough to rest for Half an hour before rolling it out, and again after rolling it, makes it easier to work with and keeps the noodles from “shrinking” as you cut it.Resting is optional, but I’d recommend it. Cover the dough with plastic wrap or a light towel or soft cloth while it rests.Let's cook 😊. Bengali Spice 💚 -
