I wanted smth that I could make quickly and was filling at the same time. Gave a glance at the fridge and decided to combine these ingredients. Turned out pretty delicious.

Add Cooksnap

2hardboiled eggs
bunchspinach
1 tbspchopped red pepper
1/4 cupchopped cucumber
1 tbsppickled cucumber, chopped
3sundried tomatoes
1spring onion, chopped
1 tbspchopped olives
1 tbspolive oil, extra virgin
3 tbspplain yogurt
1 tspdried oregano
salt and pepper

Cooking Instructions

Boil the eggs first. Next prepare the rest of the ingredients.

Cool the eggs and cut into bitesizes. Place everything in the serving dish. Pour the oil and the yogurt, and add the oregano, salt and pepper. Make sure everything is mixed together.

Optional: you may add 1 tbsp of flaxseeds or sesame seeds. And of course may add or reduce amount of each ingredients according to your taste. Enjoy!
