Ingredients

  1. eggplant
  2. 2 largeeggplant/aubergine
  3. 1/3 cupsoftened butter
  4. 1/4 tspsalt
  5. 1/4 cupolive oil, extra virgin
  6. 1 tspgranulated garlic powder
  7. onions and pepper
  8. 1/2 mediumred onion
  9. 1 pinchsalt
  10. 1 mediumbell pepper
  11. 1 1/2 tbspbutter
  12. mushrooms
  13. 16 ozwhole mushrooms
  14. 1 tbspcumin seeds
  15. 1 tbspturmeric
  16. 1 tbspground cumin
  17. 2 tbspbutter
  18. 1 tspolive oil, extra virgin
  19. 1 pinchsalt
  20. 2 clovegarlic cloves sliced
  21. sauce
  22. 28 ozdiced tomatoes
  23. 28 oztomato puree
  24. 1 tbspgranulated garlic powder
  25. 2 tbspground cumin
  26. heat
  27. 1 tspred pepper flakes, each bowl, optional

Cooking Instructions

    Preheat oven 400° Fahrenheit

    Peel and cube the eggplant. Coat with butter, olive oil, garlic, and salt. Layer on a baking pan and roast 30 minutes.

    In a pan sautee the peppers and onions in butter, and salt.

    Slice the mushrooms.

    In oil and butter add garlic slices, cumin seeds, and turmeric, heat till you can hear the sizzle add mushrooms. Add salt. Sautee for

    Add onions, peppers, mushrooms to the sauce. Let simmer 15 minutes. Add eggplants. Simmer 15 minutes. Serve hope you enjoy.
