Steps

In a big pot add water and chana Dal and keep boiling. (Waterlevel 2-3 inches above chana dal)

Add ghee while boiling. Keep stirring in between.add little water if required. When Dal completely cooked strained out the water which is called KATACHE PANI

Transfer the cooked Dal into pot again and add grated jaggery and stirr continuesly. When it dissolves add nutmeg and Cardmom powder. All ingredients should mixed well.

Transfer the cooked mixture of Dal and jaggery to Puranpoli Jali or Puranpoli maker.. You will get soft Puran when done

Make the ladoo size balls of Puranpoli

In a big bowl add both atta and turmeric salt 1tsp oil and make a soft dough adding little water at a time. add remaining oil to the dough and spread equally. Dough will soak the oil and make it sticky and easily spread.

Take small ball size atta dough and make hole in between and place Puran ball into it. And cover it from all sides

Dip that ball in dry atta and roll it like chapati but carefully and slowly so puran should not pop out.place tava on slow flame and put the poli over it. Turn carefully and fry from both sides.

Serve with ghee or katachi amti once done.
