Ingredients

  1. 5short-ribs (bone in or out)
  2. salt (kosher)
  3. 1large yellow onion, 1/2 cut
  4. 1olive oil, extra virgin
  5. 2carrots, sliced and peeled, cut
  6. 3garlic cloves smashed
  7. 1 1/2tomato paste
  8. 3 cup120 cavernet sauvignon, red wine
  9. 2 cupwater
  10. 1 bunchfresh thyme
  11. 2bay leaves

    Pre heat oven 375

  2. 2

    Season short- ribs with salt, in large pot, coat with olive oil (wait until pan is hot) to base the oil. When you can see smoke rising from pan, add short- ribs until brown on all sides of meat- takes about 3-5 minutes, Remove the short-ribs

  3. 3

    Drain fat, cut vegetables and put in a processor until vegetables are paste. Then put in the same pot with fresh oil.

  4. 4

    Brown vegetables before adding tomato paste, after you see the tomatoe paste brown add red wine. Reduce by half

  5. 5

    Add short ribs and add your water and place in oven for 3 hours. Check on time to time, add water if needed

  6. 6

    Let rest for 10 mins before serving
