Season short- ribs with salt, in large pot, coat with olive oil (wait until pan is hot) to base the oil. When you can see smoke rising from pan, add short- ribs until brown on all sides of meat- takes about 3-5 minutes, Remove the short-ribs

Drain fat, cut vegetables and put in a processor until vegetables are paste. Then put in the same pot with fresh oil.

Brown vegetables before adding tomato paste, after you see the tomatoe paste brown add red wine. Reduce by half

Add short ribs and add your water and place in oven for 3 hours. Check on time to time, add water if needed

Let rest for 10 mins before serving
