Ingredients

  1. chicken
  2. 2 1/2 lbChicken thighs and legs
  3. 2 tbspadobo
  4. stew
  5. 1 tbspolive oil
  6. 1 envelopesazón
  7. 1/2 cupsofrito
  8. 1/4 cupOlives with pimento
  9. 1 tspcumin
  10. 1bay leaf
  11. 1/2 tspItalian seasoning
  12. 8 oztomatoe sauce
  13. 1 cupchicken broth
  14. 1 largepotatoe (cubed)
  15. 4carrots (sliced 1/4 in.)
  16. 1ear corn on the cob (cut into 4 equally sized pieces)

  1. 1

    Season both sides of the chicken pieces with adobo.

  2. 2

    In a heavy skillet or dutch oven heat the olive oil over medium heat. Brown the chicken pieces on all sides. About 4-6 mins per side.

  3. 3

    Add the sofrito, tomatoe sauce, broth to the pot turning the chicken to coat then followed by the other ingredients. Cover, and reduce to a low simmer for 35 mins. or the chicken is done.

  4. 4

    Garnish with freshly chopped cilantro or parsley. Enjoy
