Ingredients

10 servings
  1. 6shallots
  2. 10 clovegarlic
  3. 1#10can diced tomato
  4. 1 cupextra virgin olive oil
  5. 1 1/2 cupwhite wine
  6. 2bay leaves
  7. 2 ozfresh oregano
  8. 3 ozfresh basil
  9. 1 bunchflat Italian parsley
  10. 1salt/pepper to taste

  1. 1

    slice shallots into half circles,and garlic into slivers

  2. 2

    in a lg sauce pot heat oil and brown shallots and garlic (this may take about 6 or 7 minutes)

  3. 3

    add the basil and oregano chopped coarse

  4. 4

    add wine and reduce by half

  5. 5

    add can of tomatoes and chopped parsley. simmer for 90 minutes stirring occasionally

  6. 6

    scoop half of the sauce into a blender or food processor. blend until smooth and return to pot to cook for an additional 15 minutes

  7. 7

    season to your preference and serve over pasta
