Baily's Irish Cream Muffins

Chocolate Heaven with only 5 ingredients! Originally reprinted from Pinterest. Tweaked recipe. Used Evan Williams Eggnog or O'Meara's Irish Cream since it was more reasonable. Original recipe said you could use Baily's Irish Cream Coffee Creamer for a "virgin" version but I haven't tried it since we like the "kick". Also you can add a few chocolate chips or nuts on top before baking for a pretty look.

I wanted to eat chocolate muffins but I worried about the calorie count… So I came up with this recipe to make rich and satisfying chocolate muffins without butter.Once you add the flour and chocolate chips, fold in gently with a rubber spatula! They won't be fluffy when baked if you mix too much. When it's baked, poke the center of the muffin with a skewer, and if it comes out clean, it's done. If not, bake for longer. Banana Caramel Cream Muffins Banana Caramel Cream Muffins
I made this because I wanted to make a dessert recipe that used caramelised bananas. The secret behind the muffins' fluffiness is to stop mixing the batter once the flouriness is gone in Step 7, and to use vegetable oil.
