In a bowl, add the sliced potatoes and sprinkle a tbspn of salt, pepper powder,a tbspn olive oil and mix well

Organise the potatoes well covering the quiche bowl/baking dish -both the base and the sides

Bake for 15 minutes at 180 degree celcius and let cool after that

Combine milk and the beaten eggs and blend well

Add in the chopped veggies to it and mix well

Add the remaining salt and pepper and mix well

Now add this egg batter to the baked potatoes and sprinkle cheese on top

Bake for 25-30 minutes till the eggs are cooked and you see the potatoes browned

Serve hot with your favourite ketchup or dips

Tips: Meat lovers can add sliced stir fried beckon/grilled red meat or chicken to the pie
