Ingredients

  1. 2 1/2 lbchuck roast
  2. 4 tbspflour
  3. 2 tbspolive oil
  4. 1large onion, chopped
  5. 2 clovegarlic, chopped
  6. 2jalapeño seeded and minced
  7. 3 cupbeef stock
  8. 2 tbsptomato paste
  9. 4 tspground cumin
  10. 1 tspchili powder

    Preheat oven to 350

  2. 2

    Toss meat pieces with flour. Brown in oil in an oven safe dutch oven

  3. 3

    Add all ingredients and bring to a simmer on the stove.

  4. 4

    Cover dutch oven place in preheated oven, baking for about 2 - 2 1\2 hours, until meat is extremely tender.

  5. 5

    Serve as is or on rice
