2 1/2 lbchuck roast
4 tbspflour
2 tbspolive oil
1large onion, chopped
2 clovegarlic, chopped
2jalapeño seeded and minced
3 cupbeef stock
2 tbsptomato paste
4 tspground cumin
1 tspchili powder

Preheat oven to 350

Toss meat pieces with flour. Brown in oil in an oven safe dutch oven

Add all ingredients and bring to a simmer on the stove.

Cover dutch oven place in preheated oven, baking for about 2 - 2 1\2 hours, until meat is extremely tender.

Serve as is or on rice
