Grilled Breakfast Burritos

I LOVE "brinner". I've been making these for years, usually for dinner, and they have remained one of my all time favorite ways to eat eggs. Sometimes i use spinach, feta & onion, other times i just use what i have on hand. How can you go wrong? xo

I LOVE "brinner". I've been making these for years, usually for dinner, and they have remained one of my all time favorite ways to eat eggs. Sometimes i use spinach, feta & onion, other times i just use what i have on hand. How can you go wrong? xo
Cooking Instructions
- 1
First, clean your potatoes (I leave the skin on and just wash them extra well), and then chop into small squares. *Do the potatoes first because they usually take the longest.
- 2
Heat some olive oil in a wok on low-med. *You can use a frying pan - I chose a wok so that I could mix my potatoes around to get an even fry.
- 3
While the oil is heating up, chop the onions how you like (I chop mine into little squares).
- 4
Once the oil is heated, add the potatoes & the onions and turn heat up to medium. Here is where i add some seasonings also - the garlic, season salt, etc. *Make sure to keep a close eye on everything and stir frequently to prevent burning. You may need to add a little extra olive oil too during this process.
- 5
While the potatoes & onions are cooking, crack your eggs into a bowl, add milk, & whisk until well blended.
- 6
Spray a non-stick frying pan with PAM, turn your burner heat to medium, and add the egg mixture, and cover with a lid.
- 7
I let my eggs cook without stirring them until they resemble a sloppy omelette in process. At this point, I turn the heat down a little bit and slowly move the eggs around so they don't start to burn. I then cover them again to let them finish cooking. *The reason I use this process is because I like my eggs fluffy and in large, bouncy chunks. Everyone seems to love my eggs & think I do something "special" to them, but really I just exercise a little patience lol 😉
- 8
Once the eggs are done cooking, add your cheeses (I go overboard lol), turn off the heat and cover them to let the cheese melt.
- 9
Once both the eggs & potatoes are ready, lay a tortilla shell on a plate, drizzle it with dressing, then load it up with 'tatoes & eggs! (I do potatoes first, then eggs on top).
- 10
Wrap up the tortilla up burrito style, spray the outside of it with some PAM, and place it in another PAM sprayed skillet with heat on low.
- 11
Brown to your liking, and be careful when turning it over to brown the other side so as not to bust the ends open.
- 12
If you like hot sauces, grab those up, and you are now ready to smash! We totally loaded our plates.....my eyes had big plans for this one, but sadly i could only destroy half of one burrito lol ....don't judge 😉

My son was never a bread fan. So scrambled eggs and toast was never an option. And pancakes were too heavy for everyday. So I came up with this solution and struck a homerun! As I list the ingredients, know that I get a homemade bulk sausage from the store as opposed to the prepackaged sausage in stores. The one I get is mild and not as spicy so keep that in mind when you get to the red pepper flakes. Angela -

Breakfast burrito Breakfast burrito
I think of all the meals you can have, a weekend breakfast is the very best. If you’re anything like me, you wake up a little muddy headed and bleary, possibly self induced, and wander around confused until you can finally find the willpower to either pop out for a greasy spoon breakfast (black pudding and Bubble and Squeak are a must), or lazily make something for yourself, and for others if you’re nice. You’re too tired to bother with anything too taxing, so aren’t that bothered about timings, when it’s done, it’s done. When it is done, and you’ve wolfed down the end result, with a good cup of coffee, and maybe some orange or grapefruit juice, you feel ready. Not for anything, but at least to pop outside the house and see what the world might throw your way today…Anyway, food lust aside, this is an adaptation of a recipe I read in the Sunday newspaper about 4 or 5 years ago, by the White House chef. It is Barack Obama’s choice for breakfast, although I have Anglicised it, simplifi Ben Groom -

I. Love. Breakfast. Burritos. Even for dinner. I usually load mine up with Sausage and bacon, but occasionally I will go meatless so I thought I would share that variety today. If you would like to add meat use 1/2 lb ground sausage or 8 slices bacon, chopped. Cook till done and drain fat. StephieCanCook -
