Ingredients

  • 1/2Sweet onion (diced)
  • 1/4green bell pepper (diced)
  • 1/2 lbground venison sausage
  • 6 sliceBacon (cooked and crumbled)
  • 4eggs (beaten)
  • 3 sliceham (chopped)
  • 3 slicecheese (of your preference)
  • 1 tbspdried chives
  • 1 tbspbrown sugar
  • 1/2 cuphash browns

Steps

  1. 1

    Heat pan and fry Bacon until crispy.

  2. 2

    Remove Bacon, leaving the grease in pan.

  3. 3

    Fry hash browns until crispy on all sides, then remove, leaving remaining grease in pan

  4. 4

    Add remaining meats, onions, and peppers to pan. Cook until ground sausage is well done.

  5. 5

    Add chives, cheese, and brown sugar

  6. 6

    Return Bacon and hash browns to the pan and mix evenly

  7. 7

    Move mixture to one side of the pan, then crack eggs onto the empty side of the pan.

    Scramble eggs until done, and mix all ingredients together

  9. 9

    Serve on warm, soft tortilla
