Macmillan charity coffee morning - I had to make lots of cakes and to save room in the oven I made the raisin, cherry and digestive, then the raisin, dark chocolate, stem ginger and ginger snaps - everyone loved them so much that people donated for the promise of making them one and delivering it to their homes! Ingredients

  1. 50 gramsbutter
  2. 2 tbspgolden syrup
  3. 2 tbspsugar
  4. 100 gramsmilk chocolate
  5. 100 gramsdark/bitter chocolate
  6. 250 gramsdigestive biscuits (broken into pieces)
  7. 80 gramsraisins
  8. 80 gramsglace cherries (halved)
  9. You can add other candied fruit
  10. 50 gramscocoa powder
  11. 100 gramswhite chocolate

Cooking Instructions

    In a pan gently melt the butter, sugar, syrup, milk and dark chocolate.

    Remove from heat and stir in the biscuit and fruit

  3. 3

    Pour into a lined tin.

    Melt the white chocolate in pan or microwave 30 seconds high then stir then 30 seconds

  5. 5

    With a spoon drizzle white chocolate from a spoon all over the top

  6. 6

    Put in fridge to set - at least 5 hours then take out and cut into squares

  7. 7

    A little twist in my tiffin - ginger snaps (maybe someone in US can convert that please), with raisins and chunks of stem ginger - see my ginger cake recipe for details - and melted dark/milk chocolate mix drizzled (blobbed) over the top
