A mixture of chicken with chorizo ??and chipotle chile I use to make tacos, giant burritos and empanadas. I learned this recipe from mom and personally think it's pretty easy.

Cook sausage in their fat in a large skillet over medium heat, until it has browned, 10 to 14 minutes. Stir in chicken and chipotle chile. Reduce heat to medium-low and simmer for about 10 minutes.

If you feel that it is very spicy add canned tomatoes or tomato sauce to reduce the spicy

Drain fat from pan before adding the chicken.
