Remove all the rosemary leaves and place in a small processor, break the thyme sprigs up and put them in the processor also. Grind until your spices are as course as your pepper.

In a large mixing bowl add your spices to your pepper and mix.

Put your meat in the bowl and coat the entire prime rib with the spice rub and preheat oven to 325.

In another large mixing bowl add a box of kosher salt 2 cups flour, mix it just a little. Add one egg white and 3 cups water. Mix by hand until a paste is formed.

In the bottom of your roasting pan make a half inch thick layer of the salt paste, large enough to hold your roast.

Lay you prime rib on the salt layer in the roasting pan, and layer the paste on the prime rib until the entire outside of the meat is completely covered (no holes).

place prime rib in oven and cook for 20 minutes per pound for medium rare

When finished cooking remove prime rib from oven and break the crust off. The easiest way is to smack the crust with the dull side of a chef's knife at the bottom and work your way around the prime rib in a circle

Set prime rib on a wooden cutting board and cover with aluminum foil tightly for 20 to 30 minutes

Carve meat and serve. When done serving pour a little of the juices from the cutting board on each piece of meat
