Mix egg yolks and honey until creamy and doubled in size.

Fold in whipped cream and the rose water.

Line a bread tin with saran wrap and pour mixture in. Refrigerate for two hours.

Mix in raspberries and pistachios until raspberries are broken up and nuts are well mixed. Fold saran wrap over the top of the semifreddo and freeze for 3 hours or over night
