Ingredients

Serves 4 servings
  • 1.1 lbsbeef round or chuck steak (about 500 grams)
  • 1onion, thinly sliced
  • 3tomatoes
  • 1garlic clove
  • 2roasted green chiles (such as Anaheim or poblano)
  • Tomato puree, as needed (optional)
  • 1potato, cut into large chunks
  • 1 pinchdried oregano
  • Salt and pepper, to taste

Steps

  1. 1

    Heat a teaspoon of oil in a hot pot. Add the beef, cut into strips, and season with salt and pepper.

  2. 2

    When the juices start to reduce, add the onion and garlic. Cover and cook for a few minutes.

  3. 3

    Add the potato and the roasted chile (cut into strips).

  4. 4

    Check the seasoning, cover, and cook for a few more minutes.

  5. 5

    Next, add the tomatoes and cover (you can add a little tomato puree at this point if you like).

  6. 6

    Traditionally, this is served with beans, but you can also add rice and a fresh salad!

  7. 7
