Ingredients

  1. 3 mediumcarrots
  2. 2stock of celery
  3. 1 smallparsnip
  4. 1leek
  5. 3 mediumcarrots
  6. 2stock of celery

  10. 1 tbspof olive oil
  11. 1 literof vegetable stock
  12. 1 pinchsalt and pepper
  13. 1onion
  14. 1 cloveof garlic

Cooking Instructions

    1.wash leek and chop onion

  2. 2

    2.wash,peel and dice the carrots ,potato ,parsnip and celery

  3. 3

    3.heat the olive oil in a large saute pan and fry the onion and leek

  4. 4

    4.add the carrots ,parsnip ,celery and potato and stir all the vegtables together

  5. 5

    5.add the vegetable stock,salt and pepper and bring to the boil . once boiling reduce the heath

  6. 6

    6.remove from stove and puree in a blender

  7. 7

    7.garnish with cream and chopped parsley

  8. 8

    n.b if you do not wish to blend the soup all the vegtables will have to be evenly diced

  9. 9
