  1. 2Rack of Ribs (2 1/2-3lbs each)
  2. 3 tbspSweet Paprika
  3. 2 tspHot Red Pepper Flakes
  4. 2 tspMustard Seed
  5. 3 tspCoarse Salt
  6. 2 tspBlack Pepper
  7. 2 tspBrown Sugar
  8. 1 tspCelery Salt
  9. 1 tspGarlic Powder
  10. 1 tspOnion Powder
  11. 1 tspDried Oregano
  12. 1 tspCumin
  13. 1 cupDistilled White Vinegar or North Carolina Vinegar Sauce

Cooking Instructions

    Rinse ribs under cold running water and blot dry with paper towels.

    Combine the paprika, hot pepper, mustard seeds, 2 teaspoons coarse salt, pepper, brown sugar, celery salt, garlic powder, onion powder, dried oregano, and cumin in a bowl or shaker. Set aside 2 tablespoons for mop sauce.
