3 tbspSweet Paprika
2 tspHot Red Pepper Flakes
2 tspMustard Seed
3 tspCoarse Salt
2 tspBlack Pepper
2 tspBrown Sugar
1 tspCelery Salt
1 tspGarlic Powder
1 tspOnion Powder
1 tspDried Oregano
1 tspCumin
1 cupDistilled White Vinegar or North Carolina Vinegar Sauce

Rinse ribs under cold running water and blot dry with paper towels.

Combine the paprika, hot pepper, mustard seeds, 2 teaspoons coarse salt, pepper, brown sugar, celery salt, garlic powder, onion powder, dried oregano, and cumin in a bowl or shaker. Set aside 2 tablespoons for mop sauce.
