Heat butter and 1tblsp of olive oil in a soup pot over medium heat

Add onion, garlic and thyme and cook until vegetables are good and soft, 8-10 minutes

Dust veggies with flour and super to cost everything well

Put in vegetable stock and bring to a boil

Add cream and potatoes, bring to a boil

Boil really hard for 7 minutes, until the potatoes break down

Cut corn kernels off the cobb and to soup

Season with salt and pepper and simmer until the corn is soft 10 -12 min

Stir in parsley and add a little splash of olive oil
