  1. 2 tbspVegetable oil
  2. 2Onions, chopped
  3. 3 cloveGarlic, minced
  4. 1 lbGround beef
  5. 3/4 lbBeef sirloin, cubed
  6. 1 canPeeled and diced tomatoes, with juice (14.5 ounce)
  7. 1 canDark beer (or bottle)
  8. 1 cupCoffee, strong brewed
  9. 2 canTomato paste (6 ounce)
  10. 1 canBeef broth (14 ounce)
  11. 1/2 cupBrown sugar, packed
  12. 3 1/2 tbspChili powder
  13. 1 tbspCumin seeds
  14. 1 tbspUnsweetened cocoa powder
  15. 1 tspDried Oregano
  16. 1 tspGround cayenne pepper
  17. 1 tspGround coriander
  18. 1 tspSalt
  19. 4 canKidney beans
  20. 4Fresh hot chile peppers, seeded and chopped

    Heat oil in a large saucepan over medium heat.

  2. 2

    Cook onion, garlic, ground beef, and cubed sirloin in oil for 10 minutes; or until the meat is well browned and the onions are tender.

    Mix in diced tomatoes with juice, dark beer, coffee, tomato paste, and beef broth.

  4. 4

    Season with brown sugar, chili powder, cumin, cocoa powder, oregano, cayenne powder, coriander, and salt.

  5. 5

    Stir in 2 cans of beans and the chile peppers.

  6. 6

    Reduce heat to low, and simmer for 1 1/2 hours.

  7. 7

    Stir in remaining cans of beans, and simmer for another 30 minutes.
