Ingredients

  • 1 lbcampanele pasta
  • 1/2 cupolive oil
  • 1 smallred onion chopped
  • 2 clovegarlic minced
  • 1 can6oz italian tuna in oil
  • 2 cupcherry tom halved
  • 8 ozfrozen artichoke hearts thawed & quartered
  • 2 tbspcapers rinsed & drained
  • 2 tbspfresh thyme leavesw
  • 1/4 cupchopped fresh flat leaf parsely leaves
  • 1salt & freshly ground black pepper

Steps

  1. 1

    cook pasta until tender but still firm to the bite@ 8 to 10 min, drain reserving@ 1cup of the pasta water

  2. 2

    in a 14" skillet heat 1/4 cup olive oil over med high heat, throw in onion, cook until soft about 5 min add garlic and cook 30 seconds or until aromatic

  3. 3

    add tuna to the skillet and using a fork break into chunks, spoon in cherry tom, articoke hearts, capers & thyme

  4. 4

    cook, stirring until tomatoes begin to soften @ 8 to 10 min

  5. 5

    put in the pasta, remaining oil & parsley. toss until all ingredients are coated, using a little pasta water if needed to thin out sauce, season with salt & pepper. serve warm or at room temperature
