4 ozshiitake mushrooms
1 lbbaby spinach
3 pinchsea salt
3 pinchblack pepper
2 tbspdry sherry
1 cupheavy cream
2 tspdijon mustard

saute mushrooms on high for 4min in evoo

add spinach and cook 3 more min

add one pinch salt and all pepper

place in casserole dish

heat sherry and cream to a boil. reduce by half

remove from heat and stir in mustard

add to spinach

add cheese
9

place under broiler until melted
10

sprinkle with remaining salt
