A very easy and quick snack from the state of Maharashtra. Usually these kothimbir vadis are first steamed and then deep fried. But here i have tried to avoid the deep frying part and keep it a bit healthy.

A very easy and quick snack from the state of Maharashtra. Usually these kothimbir vadis are first steamed and then deep fried. But here i have tried to avoid the deep frying part and keep it a bit healthy.
Steps

Mix together all the ingredients with water to form a smooth and thick batter.

Apply oil at the base and sides of a microwave safe cooker or bowl. (I used a silicon mould hence no need to grease)

Pour the mixture in the microwave safe dish and microwave on high for 3-4 mins or till done. (I had set my microwave on 800W for 5 minutes)

If after 3 mins, the batter has yet not cooked, then microwave for a minute or two.
Let it cool. - 5
The mixture should be cooked and firm.
Insert a knife or toothpick and if it comes out clean, the vadi is cooked well. - 6
Remove the steamed cake on a tray.
Cut it into desired shape (diamond shaped or square shaped slices.) - 7
Shallow fry or deep fry or pan fry in hot oil till crisp and browned.

Serve Kothimbir Vadi hot with green chutney or tomato sauce.. at tea time.
