Ingredients

  1. 1small onion
  2. Halfpumpkin squares
  3. Halfpack Mushrooms halved
  4. 2garlic cloves
  5. 1 tspcumin
  6. 1 tspturmeric
  7. 1 tspblack pepper
  8. 1/2 tspcinnamon
  9. 1 tspdry coriander
  10. 2 tbsplemon juice
  11. 1 cupquinua or cuscus
  12. 1 tbspolive oil
  13. 1 candrained chickpease
  14. Parsly to garnish

Cooking Instructions

  1. 1

    Drizzle vegetables with oil and sea salt and roast in the oven for half an hour at 300 f.

  2. 2

    Combine spices, oil, lemon juice and garlic to quinoa and cook. Once cooked add the chickpeas.

  3. 3

    Assemble and garnish with parsley.
