Ingredients

  1. 2 cupsall purpose flour - sifted
  2. 1 tspbaking soda
  3. 2 tspbaking powder
  4. 1 tspcinnamon powder
  5. 1 tspnutmeg powder
  6. 1 pinchsalt
  7. 1 tspvanilla
  8. 4eggs
  9. 1.5 cupsgranulated sugar
  10. 3/4 cupvegetable oil
  11. 1 (250 gms)tin of sliced pineapple
  12. 3 cupsgrated carrots
  13. frosting:
  14. 100 gmscream cheese
  15. 2 slicespineapple - crushed
  16. to tastePowdered sugar

Steps

  1. 1

    Sift flour. Add in cinnamon, nutmeg, salt, baking powder and baking soda.

  2. 2

    Add in grated carrots and toss

  3. 3

    In a separate bowl, beat eggs with sugar, add in the oil and 1 cup of drained pineapple juice.

  4. 4

    Chop pineapple - you need 1 cup. Toss this into the dry mix.

  5. 5

    Pour in egg mixture into dry mix till no lumps. Don’t overmix!

  6. 6

    For frosting, crush 2-3 pineapple slices. Add in cream cheese and one tablespoon of powdered sugar at a time till you each desired sweetness.

    Let Cake cool to room temp before spreading a thin layer of frosting on top.

    Enjoy!

    Bake in a pre heated oven at 180 until toothpick comes out clean!
