I love Balinesse sambal matah because of the freshness of the ingredients and the sour combination with the spiciness from the chilipadi.

You can combined anything with sambal matah, you can add grilled chicken breast, grilled beef tenderloin or even pork.

This time I try with John Dory and make this dish one of my favorite.

Ingredients

  1. John Dory
  2. Himalayan Seasalt
  3. Sugar
  4. Blackpepper
  5. Shallot
  6. Garlic (slice & crush)
  7. Lemongrass
  8. Chilipadi
  9. Olive oil
  10. Lime Leave

Steps

  1. 1

    Marinate your john dory fish with crushed garlic, himalayan seasalt, and blackpepper put aside for a couple minutes

  2. 2

    Heat the pan and add 1 tablespoon of olive oil (you can use vegetable oil, canola oil, butter. As long as you add no more than 1 tablespoon) then add the john dory to the pan and pan-fried the dory untill cooked both side

  3. 3

    On the bowl slice the other ingredients and mixed well to the lemon juice

  4. 4

    Add seasalt, sugar and blackpepper to taste
