Ingredients

  1. 1/2 cup. Urad dal
  2. 250gm. Curd
  3. 1/4cup. Tamarind sauce
  4. . Sugar powder according to taste
  5. . Oil for frying
  6. . Black Salt according to taste
  7. 1/2tsp. Asafoetida
  8. 1tsp. Cumin seeds
  9. 1tsp. Red chilli powder
  10. 1 inch. Ginger piece
  11. 2. Green chilli
  12. 1tsp. Roasted cumin powder
  13. 1tsp. Chat masala
  14. . Boondi for garnishing

Steps

  1. 1

    Rinse half cup urad dal & soaked overnight.

  2. 2

    Drain the water and add urad dal in to a grinder jar along with one teaspoon cumin seeds, pinch of asafoetida, ginger & green chilli and 2 table spoon water.

    Grind all the ingredients to a smooth fluffy batter.

  4. 4

    Take the batter in a bowl & add salt. Stir the batter briskly for 10 min. IT makes the batter more light & fluffy.

  5. 5

    Heat the oil in a kadai.

  6. 6

    When the oil becomes medium hot add spoonful batter in it according to the capacity of kadai.

  7. 7

    Fry the vadas till they become golden & crisp.

  8. 8

    Remove vadas from oil & place them on a kitchen paper towel.

  9. 9

    Take water in a bowl & add vadas in it. Soak them for 15-20 min.

  10. 10

    Take each vada and press between your palms to remove excess water.

  11. 11

    Take curd in a bowl & beat it till smooth.

  12. 12

    Add sugar powder, black salt, cumin powder in it and mix properly.

  13. 13

    Now gently place these vadas in curd.

  14. 14

    Put vadas in a serving bowl.

  15. 15

    Add more curd if required. Top up with tamarind sauce, cumin powder, red chilli powder, Chat masala & boondi.

  16. 16

    Ready to serve.
