Sabse pahle sabudana ko wash karke usko thode se water me soak karke 4 to 5 hours ke liye rakh denge.

Next 5 hours ke baad jab sabudana achhe se soft ho jaaye... iska matalab wo cook karne ke liye ready hai.

Now 1 cup water ko boil hone ke liye rakhiye.

Jab water boil hone lage flame ko low kar dijiye.

Next isme sabudana and sugar add kijiye. Aur continue stir karte huye sabudana ko cook kijiye.

Jab sabudana thick ho jaaye aur wo transparent ho jaaye. Flame ko off kar dijiye.

Next sabudana me rose sharbat add kijiye aur achhe se mix kar lijiye.

Next sabudana ko jelly mould me pour kijiye..aur ise overnight ke liye fridge me set hone ke liye rakh dijiye.

RABDI KE LIYE.
Pudding ko fridge me set karne ke baad next day Rabdi banane ke liye milk ko ek heavy bottom vessel me boil hone ke liye rakhenge.

Jab milk boil ho jaaye flame ko medium kar dijiye.

Next. Milk ko bich - bich me stir karte rahenge. Varna milk jal sakta hai aur rabdi ka taste kharab ho sakta hai. So is bat ka khas khayal rakhiye.

Jab milk thick hokar half ho jaaye aur milk ekdum creamy Malai dar ho jaaye flame off kar dijiye aur isme sugar milakar achhe se mix kijiye. Kesar add kar ke colour aane tak chalate rahein

Aapki kesari rabdi ready hai. Ise fridge me 1 to 2 hours ke liye thanda hone ke liye rakh dijiye Time ho jane ke baad fridge se rabdi aur pudding nikaliye.

PUDDING SERVE KARNE KE LIYE :
Jis plate me pudding serve karna ho usme pudding ko demould kijiye side me rabdi pour kijiye rose sharabt aur tulshi leaf se garnishing karke rabri me dry fruit cut kar ke dale ... thanda -thanda serve kijiye.
