"Rafute" Okinawan Braised Pork Belly

cut pork into 4 large pieces and place skin side down in large pot with water and cook for 40 minutes

remove the pork and set to cool. Cool stock and skim off fat.

Cut pork to 1/2" thick slices and place in pan fat side down.

Add sauce mixture to pork and boil to desolve sugars. Simmer until liquid reduces to 3/4 about 30 minutes.
