Ingredients

  1. spicy vegetables
  2. 1/4 cupoil
  3. 2 tspgrated ginger
  4. 2 eachgarlic clove sliced
  5. 1 tbspspicy green chilli pepper
  6. 1 cupchopped Chinese mushroom (hydrated)
  7. 1 tbsppreserved black bean
  8. 1 cuppreserved radish
  9. 2 tbspsichuan chilli paste
  10. 2 tbspyellow bean paste
  11. 2 cupchicken broth
  12. pork preparation
  13. 1 tbspflour
  14. 1 tbspcooking wine
  15. 1 tspcooking oil
  16. 1/3 lbground pork
  17. seasoning
  18. 2 tspsugar
  19. 1 tspchicken bouillon powder
  20. 1 tspground sichuan pepper
  21. 1 tbspsesame oil
  22. 1 bunchgreen onion
  23. 1 tbspcooking wine
  24. 6 tbspwater
  25. 1 tspdark soy sauce
  26. 2 tsplight soy sauce
  27. dofu
  28. 1 lbsoft tofu

Steps

  1. 1

    cut tofu into half inch square

  2. 2

    put tofu square in water to boil.

  3. 3

    once boiling, leave draining while you cook other items.

  4. 4

    mix the pork preparation ingredients and set aside.

  5. 5

    cut up all items needed for spicy vegetables

  6. 6

    heat oil in pan until very hot

  7. 7

    stir fry garlic, green chilli, and ginger until starts to smell good

  8. 8

    add in vegetables and stir fry 1 minute more

  9. 9

    add pork mixture and cook until meat is cooked, but just barely cooked

  10. 10

    add in sichuan paste and yellow paste, stir about 1 minute

  11. 11

    add in chicken broth and bring to boil

  12. 12

    lower heat to simmer, and add tofu

  13. 13

    cook for 5 minutes

  14. 14

    add season and stir carefully or dofu will break apart

  15. 15

    add 1 tablespoon of corn starch to 1/3 cup of cold water and stir until dissolved

  16. 16

    add corn starch liquid to pot

  17. 17

    simmer for atleast 10 minutes

I'm just confused about the pork, cause all I knew was that we must cook the pork before putting the vegetables.. Too avoid them to over cook.
