Ingredients: 250 g brown sugar- I use a mix of raw and dark brown sugar; 350 g mashed banana; 220 g natural yoghurt; 4 free range eggs- gently beaten; 1 teaspoon vanilla essence; 340 g self-raising flour; Greased loaf tin; Oven preheated to 170 degrees celcius

This recipe is from Mullumbimby,Northern NSW - affectionately known as the ' biggest little town in Australia'. It is a small town with a big heart and a vibrant community. Everyone had banana trees, or a neighbour who shared theirs. I love this recipe -it's simple, works every time and reminds me of friends and good times.

Ingredients

250 gbrown sugar- I use a mix of raw and dark brown sugar
350 gmashed banana
220 gnatural yoghurt
4free range eggs- gently beaten
1 teaspoonvanilla essence
340 gself-raising flour
Greased loaf tin
Oven preheated to 170 degrees celcius

Steps

Mix first five ingredients together in a bowl

Gently fold in the flour

Pour into a greased loaf tin or cake tin

Bake for approximately 40minutes until slightly brown and cooked through- use the skewer test.

Cool slightly and turn out onto a wire rack to cool

Can be served warm or toasted
