Chai Po-Russki Vodka Infusion

When I first tried this infusion after it say for two weeks on the ingredients, the strongest flavor was the citrus. I had it as a shot, and it was quite nice. A few days later, I mixed it half and half with OJ, and it was a bit hard to drink at first, but by the end had a nice smoothness. the spices in the infusion help the heat of a low end vodka more palatable. finally, a week later, I had a white Russian with it. I was surprised that the citrus flavors had really mellowed out and was shined was the cloves and ginger, very strongly, making a great white Russian with only a hint of citrus (like a chocolate orange). This is good stuff and I'm glad it didn't come out too much like an orange vodka.

Steps

20 mins
  1. 1

Add the cinnamon sticks, ginger, cloves, orange peels and lemon peels to a large glass jug. I used a clear beer growler, which is typically a half gallon with a screw top.

  2. 2

Pour the vodka into the container and shake.

  3. 3

Wait for one week, shaking a little each day. Leave it in a dark place, room temperature is fine. You'll notice the vodka taking on the color of the oranges primarily, and the aroma will be increasingly spiced.

  4. 4

After the first 7 days, add the pineapple core. Continue to wait for another week, shaking it daily.

  5. 5

After the full two weeks are up, pour the vodka through a coffee filter into another glass container. Discard the left overs and enjoy :]

I didn't start cooking until I started dating a vegetarian. Now I love cooking, since I have some one for whom to do it.
