Steps

Sift baking powder,baking soda, sugar, salt & Rajgira flour together.

Add ghee, chopped Dry fruits, cardamom powder & vanilla extract in sifted flour. Mix well.

Add curd and mix well. Knead a soft dough. Keep it in fridge for 30 minutes.

Preheat oven on 180 °C for 10 minutes.

Take out dough from fridge. Roll it in rectangular log. Cut them in 1/4" thick slices.

Line a baking tray either parchment paper or aluminum foil. Place cookies in baking tray.

Bake cookies on pre heated oven for 20 minutes on 160°C or until it's edges gets golden brown.

Place almonds pieces after 10 minutes of baking so that almonds stick well in cookies.

Rajgira cookies are ready. Remove baking tray out of oven.

With the help of spatula transfer them on cooling rack. Let them cool on room temperature.

Once cooled store them in air tight container & enjoy with tea on your fast or any time.
