Ingredients

  1. 500 gmpumpkin (kaddu)
  2. 1 tspMustard seeds
  3. 1/2 tspfenugreek seeds
  4. leavesCurry
  5. 2green chillies finely chopped
  6. 1/8 tspasfoetida (hing)
  7. 1 tspcoriander powder
  8. 1 tspred chilly powder
  9. 1/2 tsp Turmeric powder
  10. to tasteSalt
  11. 2-3 tspjaggery (gur)
  12. 2 tsptamarind paste
  13. Coriander leaves finely chopped for garnish
  14. Oil for Tadka

Steps

  1. 1

    Heat oil in a Kadhai. Add mustard seeds. Once splutter add asfoetida, methi seeds. Saute both. Add curry leaves.

    Now add pumpkin, green chillies & all spices. Stir all. Cover the lid. Cook it on slow to medium heat until pumpkin cooked.

    Now check pumpkin. If it is uncooked. Cook for another 2-3 minutes.

    Add crushed jaggery & tamarind paste. Add 1 cup water. Bring it boil on medium flame for 4-5 minutes.

    Once it's gravy thickens switch off gas. Serve with roti aur rice.
