Turkey Chilorio Molletes in Toaster Oven

Slice the bolillo rolls in half to make two pieces each.

Preheat the toaster oven for 5 minutes, then place the halves inside for 3 minutes.

Remove the halves and spread butter on them, then return them to the oven for 2 more minutes.

Take out the buttered halves, spread refried beans on each, and top with shredded Chihuahua cheese as desired. Place them back in the oven.

Keep the prepared halves in the oven until the cheese is melted. Meanwhile, heat the turkey chilorio in a skillet.

Once the cheese is melted, remove the halves, top with chilorio, and serve with salsa and guacamole.

Prepare the salsa and guacamole to serve on the side. *Salsa: Dice the tomatoes, onion, and serrano pepper into small cubes and mix together. Add salt to taste. *Guacamole: Remove the skin and pit from the avocado and place it in a bowl. Mash with a fork, adding water little by little until you reach your desired consistency. Add salt to taste.
