Ingredients

  1. 20 mlsrefined oil
  2. 20 gmsleeks
  3. 30 gmscarrots(cut into square)
  4. 20 gmsZucchini (thinly sliced)
  5. 10 gmsfrench beans(thinly sliced)
  6. 20 gmscelery(thinly sliced)
  7. 10 gmscabbage
  8. 300 mlvegetable stock
  9. 100 gmsTomato cocasse
  10. 1 pinchoregano
  11. 2-3fresh basil leaves
  12. 100 gmsbaked beans
  13. 15 gmsMacroni pasta
  14. as per taste Salt and white peeper
  15. 5 mlsolive oil
  16. 1 gmsparmesan cheese(for garnish)

Steps

  1. 1

    Heat refined oil in a sauce pan.

  2. 2

    Add leeks, carrots, Zucchini, French beans and celery.

  3. 3

    Cover the pan reduce the heat to low, cook for 15 mins, shaking the pan occasionally.

  4. 4

    Add stock, Tomato concasse and oregano.

  5. 5

    Cover again and simmer for 20 mins more.

  6. 6

    Add the baked beans, macaroni pasta, cabbage pieces and fresh basil leaves and cook for 10 mins more.

  7. 7

    Season with salt and papper

  8. 8

    While serving garnish with grated with parmesan cheese and olive oil on top.
