Yakimeshi Rice with Tampico Sauce

For the rice: Rinse 1 cup of sushi rice (about 200 grams) and soak for about 15 minutes. Cook the rice over medium-high heat with 1 cup plus just under 1/4 cup water. After 10 minutes, reduce to low heat, cover, and cook for another 11 minutes, or until the water is absorbed. Remove from heat when no water remains.

Dice the carrot into small pieces and cook separately since it takes longer to cook. Cook the broccoli florets whole, then chop them into small pieces once cooked.

Grill the beef steaks with a little soy sauce, salt, and pepper, then cut into small pieces. Dice the onion and bell pepper, then sauté them. Once everything is cooked separately, combine the rice, carrots, broccoli, onion, bell pepper, and beef in a bowl.

For the sauce: Finely chop the surimi and onion, then mix with mayonnaise and cream cheese. Season with salt and pepper.

Garnish with sesame seeds and serve with soy sauce. Be careful with the soy sauce, as it can settle at the bottom and make the dish very salty, so use it sparingly.
