Vegetables and Paneer Masala

Slice paneer, babycorn and mushroom into bite size. Boil baby corn in salt and turmeric water, saute mushroom and paneer in 1 tsp of oil and pinch of salt.

Saute onion, tomato, green chilli, coriander, curry leaves and ginger together till all become nice golden brown. Let it get cool and make fine paste of it. Add curd while making paste.

Now heat oil and butter together. Add finely chopped garlic, soaked cashew and curry leaves and fry it till it become light brown.

Add above made paste and saute it till become slightly dry. Add all spices and mushrooms, paneer and corns and mix it well. Add little water to get it easier to mix.

Add coconut milk and stir it for while. Add sugar, kasuri methi, kitchen king masala and most important salt. Let it cook for 4-5 mins on low flame and then garnish it with fried onion, coriander and cheese. Serve it with rice or naan whatever you prefer.
