Beef Trotter Tostadas

Here in Mexico, tostadas are a very common dish. You can find them with chicken, pork, chorizo, beef trotter—the list goes on. Today, I went to the grocery store and found cooked beef trotter. I didn’t hesitate for a second to buy some and make these. They’re truly delicious.

Rinse the beef trotter thoroughly.

In a pot, add the water, vinegar, oregano, 1/3 cup of the onion, and the beef trotter. Bring to a boil for a couple of minutes, cover, and let cool.

Once cooled, remove the beef trotter and strain. Reserve some of the vinegar mixture.

Heat the refried beans.

Spread a layer of beans on each tostada shell, then top with beef trotter, lettuce, sour cream, cheese, avocado slices, and pickled jalapeño strips.
