Ingredients

  1. 3/4 lbBeef Stew Meat
  2. 2 1/2 tspChile Powder
  3. 3/4 tspsalt
  4. 1Chopped Onion
  5. 1Chopped Bell Pepper
  6. 3Garlic Cloves Chopped
  7. 1 tspDried Oregano
  8. 1 tbspflour
  9. 2 cupBeef Broth
  10. 1 can15 oz Stewed Tomatoes
  11. 1 lbpeeled Baby Carrots
  12. 1/2 lbsmall Potatoes peeled and halved
  13. 1 packages10 oz frozen Corn
  14. 1/4 cupCilantro chopped

Steps

  1. 1

    Heat a large nonstick pot over medium-high heat. Lightly coat with nonstick cooking spray. Season beef with chile powder and salt. Add beef to pot and cook 2 minutes, turning 1 remove to a plate. Add onion, green pepper, and garlic, cook 5 minutes stirring occasionally. Add oregano, remaining Chile powder, and remaining salt. Stir flour into beef broth until dissolved and mix into pot. Add tomatoes, carrots, and potatoes. Simmer on medium-low heat 10 minutes or until vegetables are tender. Add corn and cooked beef. Cook 2 minutes to heat through. Garnish with cilantro and serve
