My family enjoys this style of cabbage with chapati or ugali. It's an easy and yummy recipe that can turn plain old cabbage into something spectacular.

Chop the cabbage (not too thin and not too chunky). You can use a knife and chopping board or any other handy gadget you might have. Set aside in a bowl.

Puree the tomatoes in a blender with a little water and set aside

Finely chop the washed cilantro and set aside

Dice the onions and put them in a cooking pot with the oil. Switch on your cooker burner to medium high and start frying the onions.

When the onions start turning transluscent add the curry powder and mix to cook it in the oil until the onions start turning a light golden brown.

Once the onions turn a light golden brown reduce the heat to low and pour in the pureed tomatoes. Add salt to taste, stir and cover the pot. Let it simmer for 10 minutes on low.

After 10 minutes the pureed tomato will have reduced and started releasing its oils. At this point your tomatoes are cooked (very important)

Add the cabbage and turn up the heat to medium high again

Stir to mix the cabbage with the tomato until it is all coated. Cover with the lid and let it cook for 10 minutes

After 10 minutes it should look something like this. When you taste it should be cooked but with a little crunch.

Add the chopped cilantro and mix it together with the cabbage and immediately turn off the heat.

Serve the cabbage immediately, or re-heat it later when you are ready to eat.
