Jaggery Sev are consumed widely across North India in winters. It’s also a traditional sweet-savoury snack served to guests. They are made with a lot of variations across the country as well. Made without the usage of sugar and with minimal ingredients, Jaggery sev are healthy and delicious

Sev Preparation:

Place the chickpea flour in a bowl and add 2 Tb oil and sufficient water to knead a soft dough

Keep covered aside for 30-40 minutes

Heat enough oil for deep frying in a wok
- 5
Grease palms with 1 Tb oil and knead the dough again before using

Grease chakli maker with oil and choose desired jaali/mould for sev

Put the dough into the chakli maker and create drop in batches of sev into hot oil

Fry till crisp and brown

Rest the fried sev on a kitchen tissue and let cool

Jaggery Syrup process:

Melt 1 Tb ghee in a nonstick pan and add the jaggery
- 12
Stir and cook on Low heat till the Jaggery melts completely

Take off heat once a thick syrup is obtained.take care not to burn the syrup

Add the fried and cooled sev into the jaggery syrup in batches and coat well with the syrup by letting them rest in it for 2-3 minutes

Place the Gud sev in a colander so that any excess syrup could drain off

Store airtight
