place rice within a boiling pot, put extra virgin olive oil in with the rice then add water to a half inch above the rice, you may need to add more or less of the 2cups of water. just keep an eye on how much water you are placing over your rice and again make sure you have it half an inch above the rice. mix the rice, water and oil around in the pot a couple of times. place pot over burner on stove turn heat to high. bring to a boil and wait till water is almost gone. stir rice and make a mound in the middle of the pot with the rice turn heat to low cover with lid and let simmer for about 15 minutes or until the rice is between soft and a little chewy, you will have to taste to make sure. the rice should not be sticky and the bottom of the rice should be a little brown or close to burnt.
