Peel and dice potatoes.

Toss the potatoes into boiling water and leave until softened.

Preheat oven to 200 celcius.

Using beef bacon chips or slicing beef bacon into short thin strips, fry until crisp. Put aside when done

Slice scallions/ spring onions thinly.

In a large bowl, mash the boiled potatoes.

Add in butter and pour in milk until you reach a smooth consistency or one you favour.

Toss in the scallions/ spring onions and fried beef bacon.

Mix the mixture thoroughly and add the cheddar.

Mix thoroughly again before placing it into the over for 20-25 minutes.
