Mix the polenta, parsley and mustard powder and add to potatoes.

Using your hands, mix the potatoes through the polenta mixture to coat well.

Place the potatoes in a roasting pan and drizzle with 100ml olive oil.

Roast until cooked and crispy, about 1 hour 15 min
