Preheat oven to 180C

Peel and quarter the potatoes, place them in a bowl and season well.

Drizzle with 100ml olive oil and toss to combine.

Mix the polenta, parsley and mustard powder and add to potatoes.

Using your hands, mix the potatoes through the polenta mixture to coat well.

Place the potatoes in a roasting pan and drizzle with 100ml olive oil.

Roast until cooked and crispy, about 1 hour 15 min
