Ingredients

  1. 3chopped yellow medium onions
  2. 2red bell peppers, cored/seeded/diced
  3. 2yellow bell peppers, cored/seeded/diced
  4. 228 oz. cans diced tomatoes
  5. 4split chicken breasts
  6. 215.5 oz. cans kidney beans, undrained
  7. 1/4 cupolive oil
  8. 1/4 cupminced garlic
  9. 2 tspchili powder
  10. 2 tspground cumin
  11. 4 tspsalt
  12. 1/4 cupminced basil
  13. 1/4 cuporegano
  14. 1black pepper to taste

    Preheat oven to 350°.

  2. 2

    Rub chicken with handful of oil and place on baking sheet. Season with salt and pepper to taste. Bake 35-40 minutes.

  3. 3

    While chicken is baking, cook onions in oil 10-15 minutes over medium-low heat in large pot. Add garlic and stir; cook 1 minute.

  4. 4

    Add tomatoes and beans. Bring to a boil; reduce heat to low. Summer uncovered 30 minutes, stirring regularly.

  5. 5

    Remove chicken from oven and allow to cool 3-5 minutes. Separate meat from bones and skin, if necessary. Chop or shred chicken and add to chili.

  6. 6

    Summer another 20 minutes uncovered.

  7. 7

    Serve over rice or with corn chips (Frito's scoops suggested).
