Ingredients

  1. dinner
  2. 1 lbboneless chicken breast
  3. 1 bunchasparagus chopped into 2 inch pcs.
  4. 1/4 cupsoy sauce
  5. 1/4 cupthai fish sauce
  6. 2 cupcooked white rice
  7. 1 packagessliced washed mushrooms
  8. 1 tbspminced garlic

    cut chicken into small cubes so that they cook evenly. approx 1 inch

  2. 2

    in a larger sized pan over medium heat, add soy sauce and fish sauce and chicken. brown the chicken on all sides but do not fully cook chicken. approx 2-5 mins.

  3. 3

    remove the chicken from the pan using a spoon with holes so that the juices stay in the pan.

  4. 4

    in the same pan and heat, add the minced garlic. then add the mushrooms and cook for 1 min while stirring. then add the asparagus and continue stirring. cook for about 2-4 mins.

    then add the browned chicken back to the pan and cook for about 5 minutes longer while stirring. check the chicken to make sure it is fully cooked.

    once it is done serve immediately. over white rice and enjoy. by covering this, the veggies may get soggy. I usually leave uncovered and warm up more if someone wants a second serving. otherwise cover and refrigerate leftovers.

    **** you can add as many different kinds of veggies as u like. ex. onions, bell peppers, carrots. be creative. but you may need to add more fish sauce and soy sauce to taste. I also added some crushed red peppers later for some heat and some white seseame seeds for taste and texture. go healthy by usuing low sodium soy sauce, and brown rice instead. may also use fresh garlic.
